Like many, my husband and I will take time off from work between Christmas and New Year’s Day. I hope a few of those days will be lazy days, unscheduled, and will start with a leisurely breakfast. We often make Oven Baked French Toast on our lazy days, served with fresh squeezed orange juice, hot tea and plenty of pure maple syrup. Oven Baked French Toast
½ cup butter or ghee
4 TBSP honey
1 teaspoon cinnamion
6 eggs
1 cup orange juice
¼ teaspoon salt
12 thick slices of bread
Preheat oven to 400 degrees. Melt butter and with honey in a saucepan. Spread the mixture on the bottom of a large baking pan or two 9 x 13 baking dishes
In a large bowl, beat the eggs, and add the orange juice and salt
Soak each slice of bread well with the mixture, place in the baking pan and sprinkle with cinnamon. Bake for 20 minutes or until golden. Turn the toast onto a platter, browned side up. Serves 6.
